Oude Luiaard is a sour ale obtained by blending our wild farmhouse Invernomuto with Lambic 18 months by Oud Beersel .
The name of this beer literally means old sloth in Flemish and wants to celebrate the meeting of our reality Brada, located in Italy, near Bologna, with the Oud Beersel brewery , in Pajotteland, Belgium.
The illustration on the label shows the famous Beersel castle - symbol of the brewery - against the background of a statue that stands in the middle of the lake in front. This monument is inspired by the marble sculpture of a tomb by Putti ('800) and dedicated to Anna Maria Ferreris ( Flemish born in Brussels), present in the evocative monumental cemetery La Certosa , in Bologna . The statue is an allegorical representation of the inexorable passage of time - dear to us in our refinements - , and it is extremely symbolic, being dedicated to a Flemish woman who then lived her life in the Bologna city.

Given our work focused on wild and sour beers (and wood refinements ), being able to use a traditional Lambic in a blend - spontaneously fermented beer from Pajottenland, Belgium - , it is an honor for us and a wonderful opportunity to embrace a culture brewery from which we are deeply fascinated.
We are doubly happy with this collaboration with Gert Christiaens - protagonist in 2005 of the modern revival of this famous Belgian brewery - as the refinements of Oud Beersel are characterized by great elegance and balance , characteristics that we feel deeply close to the production philosophy of our Brassicola Winery: simplicity instead of spectacles, nuances rather than peaks.
The pungent wild and freshness of our farmhouse ale Wintermute - in turn composed of a blend between Fleet-foot Brux (brett ale) and Nessun Dorma (vieille saison) - goes with the deep notes of the Lambic , while the two souls find a union rich in fruit , cereal and cellar components .
An elegant acidity and rustic profile act as a leitmotif between wooden nuances and funky cues , while a noble hopping enhances the gustatory background with an elegant amaricatura.
The variegated fermentation environment makes it an evolving beer that can be used for aging .
