We make no secret of just how much we love Mosaic here at Pollys HQ, whether its hot side or cold side, we absolutely love how much this incredible varietal makes our beers pop thanks to the complexity that warrants its name. After going down an absolute storm when we brewed it for the first time in 2020, it felt completely natural to treat this beer to a distinctly 2022 vibe, with a full brew team utilising their talents to the absolute max. Whilst weve done single hop Mosaic showcases before hello Fickle and last years Heavy Moon weve never gone as big as we have with More Than Dreaming. With a frankly crazy 70kg all in, and a hopping rate of 20g/l, this beer is bursting with the typical Mosaic notes; a medley of berries, bubblegum, and mango, with some of the lesser picked up flavour profiles rosewater, tangerine, as well as earthy bitterness to round everything off.
