The first in our newest, Patrons Projects series (our 44th), Northern Spirits, will see us collaborate with the best cocktail bars in the North, to bring you beers inspired by signature and classic cocktails.
This is Philadelphia Fish House 5.5% IPA.
We sat down with Leeds’ Below Stairs to try out a few cocktails (tough gig, but someone’s got to do it) to come up with an idea to translate one of their signature cocktails into a beer. The result is inspired by the rum-based cocktail Philadelphia Fish House, first made in 1732, at Philadelphia's fishing club, the State in Schuylkill.
The key ingredient, other than rum, is peach. Lots of peach. Other components of the cocktail include lemon zest, added in the brewhouse for an underlying zing, and tea, for some tannic dryness, for which we can rely on just a touch of tannic hop bite from the dry hop. We've used peach puree, peach oil-infused hop oils and our new favourite hop, Luminosa, for layers of summery peach character.
