It’s a tale getting to be as old as the brewery at this rate. Whilst we fully embrace our status as a modern day juice slinger, we always make time to honour the beers we ourselves grew up drinking in an effort to shine a light on some of the lesser utilised hops in a sea of ultra modern, fruit forward new school varieties. Old school stalwarts Columbus and Simcoe bring the classic pine, resin and citrus notes to the party as a bass line to set things up, whilst two of our favourite newer school varieties in El Dorado and Mosaic bring the juice to proceedings; with a tropical punchbowl of flavour that dances along the palate. The result is a pale that is the best of both worlds; sweet without being cloying, bitter without being too much, and that distinctive Polly’s juice that everyone has come to know and love
